It's time to cook the turkey! Bring out the stuffing! Or are you more of a dressing person? I'm not much of a cook. Jason is the chef in the family. I make a few dishes. One of my specialties is sweet potato casserole. I have to tell you, its yummy. Give it a try.
__________ 3 cups sweet potatoes, cooked and mashed
1 cup sugar
2 eggs
1/2 cup milk
1 tsp. vanilla
pinch of salt
1/3 cup butter
TOPPING: 1/3 cup flour
1 cup brown sugar
1 cup chopped pecans
1/3 cup butter, melted
Combine all above ingredients until smooth. Pour into 2 qt. casserole dish. Mix all topping ingredients and spread over sweet potato mixture. Bake at 350 degrees for 35 to 40 minutes

Although Thanksgiving has never been much of a celebration in my family, I am reminded by the happenings to give thanks for so much. I'm thankful for a family of friends who love and support me and often tolerate and endure me. I'm thankful for a home, humble though it may be, that is filled with love. I'm thankful for another day of grace.
